Lots of damper recipes around but here's something I tried at home.
I was using my enamel camp cup for measure.
1 and a half cups of self raising flour
1 cup of sliced and diced boiled Jap pumpkin
Salt & sugar to taste
Mix the pumpkin in well with the flour with a splash of milk until it turns yellow and add extra flour as ya go, the pumpkin gives off a lot of water
when ya got ya doughy mix, knead it a little bit
Now I was only using the kitchen oven on low heat and it was test the top of the damper as it was cooking, you'll know by the feel of it when it's ready
I can tell ya now, it turned out bloody brilliant.
Throw in a hand full of currents for extra flavour if you want but leave the sugar out when you start, lots of sugar in the currants.
I used a small bread loaf pan to cook it, the damper lasted a week before it started to go mouldy and even then it tasted good.

That's it cliff --when I head bush next season i'll take this oven I brought for $70--still new and still in the box--mate r we going to get fat

Damper recipes are running wild in my head today   Razz
so here's some more.

Damper and 2 minute noodles, Yummy
Damper with peas and corn and tomato sauce, delicious
Damper with pepperoni and chopped carrot and beetroot, this one will blow ya mind

I better get cookin   lol!
