Keeping veges fresh
I guess that for most campers, storage space is at a premium, especially in the fridge. Here’s a couple of little things that I do to prolong the life of veges (and fruit) while in the bush.
First, don’t leave them wrapped in plastic or plastic bags. I place each vege in a plastic tray or basket and put them in an esky.
Each night leave the esky uncovered outside and somewhere off the ground. First thing next morning put the lid back on and store the esky in the coolest place available.
A lot of nights can get pretty cool, so try and use it to advantage.

Another option is: Yes put your veges (like carrots, onions and Tomatoes) in Plastic trays.
Wrap each in additon in kitchen towel (paper) and control every day. Replace wet paper.
Veges need wetness for rotting.

Spuds & onions don't really need to be put in a fridge. Ya better off just leaving them out of refridgeration as they will keep for a long time without cold storage.
try to get some thick paper bags for them. It's the plastic that makes them rot.

same as eggs, they dont need refrigeration so just keep in a shady place.

wrapped in tinfoil and in the coals for awhile. ya can't get better than baked spuds and onions except for the onion smell next morning but just stand down wind

just take vegies in a tin--no mess no waste no nothing -
most cans have ring top pull tops--real easy
just open and cook....bootifull..

Yep have to agree with you there Ray,vegies in a tin is way to go.Tomatoes I like to take fresh and not in cans because they claim that the acid in tomatoes reacts with the plastic lining in the can and is possibly carcinogenic.Like Jase said ,heaps spuds and onions with copious quantities of meat.

Hi All,
To keep our vege's from going off we use special plastic vege bags that have ventilation holes they keep things like cabbages and tomatoes for twice as long
For greens in our lunchtime sandwhiches we grow mung beans and alfalfa ,they take 3-4 days to grow and kept fresh in the fridge while the next lot are growing
When the tomatoes run out we get out the tinned beetroot for use in the sandwhiches

I agree with Bignuggs and store spuds and onions in a cupboard in the van.
Recently I was given a tip on storing carrots in the bottom of the fridge and found they keep for a very long time - roll each carrot separateiy in a piece of paper towel then wrap in alfoil. It works.
