Mt Barker Chicken
We're always on the lookout for Mt Barker marinated chicken. It sometimes comes from Coles cryovaced in an oven bag. The average Coles store doesn't even know it exists. If you can get it, all you have to do is drop it in the camp oven. Sandra usually drops a piece of oven paper in first to prevent the bag from burning if I get a little over eager with the coals.
Several flavors are made and preparation time is about zero. It completely cooks in the bag leaving after dinner cleanup dead simple. We usually have the potatoes, carrots and sweet potato or pumpkin with a little butter and wrapped in foil under the coals.
After cooking the chicken we drain some of the liquid into a small saucepan, throw in a spoon of Gravox gravy mix, stir and heat.
We used to add surprise dried peas but they're not available anymore.
Simple cooking, great flavor and no messy cleanup.

Hi Phil/Sandra,
Yes it is a welcome meal when under camping conditions.
We cook this way while away, never fails.

Sounds good. I’m always on the lookout for different meals that can be served in the bush, particularly when they involve minimal preparation and cleanup.
You shouldn’t be surprised that Surprise dried peas are no longer available. Increasingly I’ve noticed that in Coles and Woolies many of the old favourite brands are just quietly disappearing off the shelves and being replaced with their brands.

Martin these cryovaced chickens are flat. I think they are just cut down the middle and laid out flat like roadkill..
